Avocado Toast with Curry Egg

Introduction

This is one of my favorite breakfast (or brunch) recipes. If you love spicy food, with the creaminess of smashed avocado and the crispiness of a fried egg, you will love this! Let’s walk through the ingredients.

Ingredients

To prepare this dish, you will need the following (1 portion):

  • 3 tablespoons olive oil
  • 1 large egg
  • 1 slice bread
  • 1/2 teaspoon curry powder
  • 1/2 avocado
  • a few drops of lime juice
  • a little salt to taste
  • a little chili powder
  • Chopped cilantro, for garnish (optional)

Preparation Steps

1. Start by heating up your small skillet in high heat. As soon as it is hot, drop the heat to medium and add 2 tablespoons of olive oil. Carefully add the egg and let it cook until the whites are golden brown and crisp around the edges (between 2-3 minutes). If the edges are dark but the whites remain unset, remove the skillet from the heat and cover it for 10 seconds until the whites are fully cooked. Season with a pinch of salt and pepper.

2. In a small skillet on medium heat, toast the curry powder and the chili powder (or dried chili peppers) until it becomes fragrant (less than 1 minute). Add 1 tablespoons of olive oil and mix it. In a bowl, mash the avocado with lime juice, salt, and pepper. Meanwhile, put the bread in a toaster.

3. Once the bread is toasted, top the sliced bread with the avocado mash, followed by the crispy egg, and drizzle it with the curry oil. If you want to add a little bit more flavor, sprinkle it with a little chopped cilantro.

My Opinion

This Avocado Toast with Curry is absolutely delicious if you love spicy food. I have tried dozens of avocado toasts, paid absurd amounts of money for them, and not a single avocado toast that I tried has so much flavor and creaminess as this one. It’s perfect for breakfast or for brunch!
