Easy Oven Chicken Breasts

Easy and Convenience Cooking

This is my go-to meal when I am in a hurry and want something fast, easy, and tasty. It won’t take more than 35 minutes (counting with the preparation). The combination of chicken breasts and bacon (or chorizo if you like) delivers a delicious flavor that is both satisfying and quick to prepare.

Ingredients required (for 4 people)

To prepare this delightful dish, you will need:

  • 4 chicken breasts
  • 60g bacon strips (or chorizo)
  • Salt
  • Black pepper
  • Juice of half a lemon
  • Tomato pulp
  • Thyme
  • Freshly grated parmesan cheese (optional)
  • Melted butter (or olive oil)

Preparation Steps

Start by preheating your oven to 200°C (approximately 390ºF). Place the chicken breasts in an oven-safe dish, and make 3 or 4 cuts on the surface of the chicken breasts. Insert the bacon strips into these cuts for added flavor and moisture. Season the chicken with salt and freshly ground black pepper. Squeeze some lemon juice on top, and spread a layer of tomato pulp with a kitchen brush.

Sprinkle thyme and generously top it with grated Parmesan cheese, ensuring the chicken breasts are well covered. Finally, drizzle some melted butter (or olive oil) over everything for extra richness. Bake in the oven for approximately 25 minutes or until the chicken is cooked through and golden brown. This meal is a wonderful quick fix, ready to be served alongside your favorite sides. It goes well with white rice and roasted vegetables.

My Own Touch

I’m not a big fan of cheese, so I try to skip it whenever I can. If I feel like adding extra flavor, I finely chop one or two gloves of garlic and mix it with the melted butter before drizzling it over the chicken breasts.
If you want to add a little spice, just sprinkle the chicken breasts with a little bit of chili powder or add some jalapeños between the cuts.
Note: be careful when dosing the salt, because bacon is usually salty by itself.
