This banana bread recipe is one of my favorites for a quick, nutritious breakfast or to satisfy my craving for a snack.
Ingredients:
To bake the healthiest and most nutritious banana bread, you will need the following ingredients:
- 1 ripe banana
- 1/2 lemon juice
- 30g of all-purpose flour
- 30g of oat flour
- 30g of vanilla whey
- 120g of greek yogurt
- 2 whole eggs (or 100g of egg whites)
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- Pinch of salt
- Pinch of cinnamon
- Optional: walnuts or dark chocolate chips
Step-by-Step Baking Instructions
Now that you have gathered your ingredients, follow these steps:
- Preheat your oven to 350°F (175°C).
- Crack the 2 eggs in a small bowl and beat them until smooth (if you use egg whites, skip this step).
- In a mixing bowl, add the banana, lemon juice, and a pinch of salt and mash the banana with a fork until smooth.
- In another mixing bowl, add the all-purpose flour, oat flour, whey, baking powder, and baking soda. Mix everything.
- Add your mashed banana to the dry ingredient mixing bowl, and then add the rest of the ingredients (greek yogurt, vanilla extract, eggs, cinnamon)
- Mix everything slowly, you do not want to overmix to ensure a light texture.
- If desired, add walnuts (or dark chocolate chips) and a few banana slices for added texture and flavor.
- Cover your loaf pan with coconut oil (or use parchment paper), transfer the batter to your loaf pan, and distribute it evenly.
- Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool for about 20 minutes before transferring it to a tray.

Once cooled, slice your healthy banana bread and enjoy it as a nutritious snack or breakfast.
NOTE: I do not use any type of sweetener for this recipe because the ripe banana and the whey protein are already sweet enough for my taste, but if you desire it sweeter, you can add a teaspoon of stevia or monk fruit sweetener.
NOTE: Sometimes, I do a little twist. Instead of vanilla whey protein, I use chocolate whey protein and skip the vanilla extract from the recipe.
